Originário do Leste Asiático, China e Japão e também de outros países com clima tropical, este é o segundo cogumelo mais consumido e produzido no mundo. Rico em proteínas e vitaminas, contém propriedades medicinais que ajudam no combate a inúmeras doenças e auxilia no controle do colesterol, cardiopatias e arteriosclerose. O shiitake possui substâncias antitumorais (anticancerígeno), antitrombóticas, antivirais e reguladoras de pressão, e dele é retirado o “Lentinam”, polissacarídeo utilizado no tratamento do câncer e contém o “Interferon” proteína que age no interior das células evitando o desenvolvimento de vírus.
